Production of fish muscle blocks from low commercial value species– Pilot plant (Port of Marin)

In the pilot plant that the iSEAS project has put into operation at the facilities of the Port Authority of Marin and Ría de Pontevedra, different tests are being carried out to obtain added-value products.

During the 18th and 19th of April different tests were carried out to elaborate muscle blocks. These tests are implemented in the pilot plant section destined to obtain products for human consumption. The muscle of different fish species that, although they are not affected by quota, are usually part of the discard were used to produce the muscle blocks (blue whiting, Atlantic mackerel, gurnard, slender rockfish).

 

In collaboration with the VALDESCAR project, the Instituto de Ciencia y Tecnología de Alimentos y Nutrición (ICTAN) will use these blocks to obtain various types of products (hamburgers, nuggets, etc.), that will be assessed in different tastings and demonstration days that will be organized shortly.
